I literally threw the ingredients in, put it to pressure, released pressure and stirred in the last ingredients. I even think with how easy it is that this should be hangover or sleepless nights with baby’s food!

Then when the Instant Pot beeps, manually release pressure and add your other ingredients. Change to the keep warm setting so that your food doesn’t go cold and so that your cheese warms up in the pot.

Slimming World Beef Stroganoff With Philadelphia

Is it me or does everything taste better if you add Philadelphia to the ingredients list?

It just gives it that AMAZING creamy taste and you would think that you had used double cream in this recipe. It truly is that good.

My daughter (who is 4 this November) has a favourite word now and it is “wow” and that is what she said when I gave her the empty Philadelphia tub to lick out! She also hid under a table so that her younger brother couldn’t steel it from her!

I also recommend that you use the garlic herb version of Philadelphia (light of course for Slimming World HEA). That way you need less herbs and no garlic in the cooking process and it frees up the amount of ingredients that you need to use.

I also use one 150g tub. Because its just one 150g tub and you are feeding 4 of you, this works out at just 37.5g per person. You could of course add extra cheese on top and you would still be well in on your healthy extra cheese allowance.

Notes

I would say this was enough to feed four of you a big portion each. But when we had it we had enough for five of us plus a little left over, so it depends how much you eat! I used two packs of 300g of beef frying steak. I call it frying steak as its incredibly thin steak that takes a minute to fry in a pan.

It can also be tough to chew, but thanks to the Instant Pot comes out as tender as fillet steak. You can use any cut of beef you like, this is just our personal choice. I have measured the balance of pasta to liquid several times and found that for the best results you need 2/3 water to pasta. I placed the pasta into cups as I measured it and filled 3 cups with pasta which worked out at 300g.

Then I added 2 cups of water which is 500ml. You need this balance otherwise the pasta will stick to the bottom or too much and you will have to drain your pasta before adding the cheese, which is annoying when it can all be cooked at once in the Instant Pot. I also found that it didn’t need beef stock as when I flavoured the water it tasted too strong and lost its cheesy flavour.
