Ingredients
- 8 oz. 230 g cauliflower, chopped into bite sized pieces
- 1 lb (5 cups) 450 g (1.2 liters) broccoli, chopped into bite sized pieces
- 3 oz. 85 g leek, sliced thinlyleeks, sliced thinly
- 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
- 3 oz. 85 g butter
- ½ (2 oz.) ½ (60 g) red bell pepper, dicedred bell peppers, diced
- 4 tbsp 4 tbsp sour cream
- ½ cup 120 ml fresh oregano or fresh thyme
- salt and pepper

Making low carb simple
Instructions
Instructions are for 4 servings. Please modify as needed.
Place a large skillet over medium-high heat and fry the vegetables in butter until golden brown.
Add remaining ingredients and stir until the cheese is melted. Season to taste.
Tip!
For freshness and flavor, choose cauliflower heads that are tightly closed and firm. Try colored cauliflower for a change! Green or purple cauliflower makes a stunning dish!

I had to use a frozen herb mix "Italian Style". It had chopped herbs and some finely chopped onion in and went really well with the veggies. It's another yummy dish I will certainly make again.

Try little pieces of cooked bacon, try before salting in case your bacon is very salty, I don't know.
I want to try radish also, for some reason. It's got a nice colour to it.

I do not really like sour cream or cauliflower but I LOVED this! I felt like I was eating something on the naughty list. I think since the cauliflower was fried up in butter it made it edible for me. Yum!

At the bottom of each title paragraph, it will say whether it is low, moderate or high carb. If you "hover" over that, more information will come up. This recipe is eight carbs per serving.
I'm wondering if I use coconut or almond flour, if I could do sort of a traditional white sauce...I could use almond or coconut milk, too...hmmm. I just looked up the carbs in a leek: 13 minus two for fiber= 11 usable carbs...might just leave that out. It doesn't sound good to me in this dish anyway.

I tried to make a roux for some broccoli cheese soup with almond flour instead of regular flour. It was a disaster! Is there a good substitute to thicken a soup?
Also any suggestions for BRAND names of yogurts which are legal? I keep reading labels but can't seem to find any that would fit on the strict low carb program.
Thank you everyone who responds! I have been on for 2 weeks and have lost 7 lbs and I really am excited to keep losing another 20!

How long do you fry for? And do you add the sour cream and cheese in in the frying pan or after?
I like to fry the cauli and Veges with butter for about 5-10 mins (longer if u want) I then just throw everything else in cheese sour cream etc cover pan and put on low simmer for another 10 mins or so! I cook the chicken while Veges are simmering and when chicken is done I tuck in .
I put the herbs in just before adding the sour cream and cheese ( I put turmeric and cumin as well )

I'm confused about portions. The introduction says "eat all you want" of the meats and vegetables listed, but these portion sizes are rather small and the amount of carbs would easily go over the allotted 20g if they were doubled.

I really liked this dish. I added sour cream and shredded parmesian cheese after cooking and putting in serving dish. I subbed green onion for leeks. I was thinking it may be easier to cook veggies like I cook cauliflower steaks (bake at 500 degrees for 15 minutes). I got kinda impatient waiting for it to fry. I will make this dish again!

Try a little arrowroot for thickening. There's 55 carb grams in ½ cup, but you would only need a couple teaspoons in most cases.

This was lovely. Didn't have leeks so used just 1 spring onion, used up some swiss cheese (was a bit stringy once melted but nice all the same) and fresh oregano from the garden. Really lovely with a simple steak diane/mushroom concoction I made. Delish.

I always use high fat cream with a few squeezes of lemon juice, makes good "sour cream" Keep it simple don't need to buy special cream for every dish.

try using cream cheese for thickening. There are recipes, but you can soften an ounce or two and stir that into your almond milk or whatever.

I love this recipe! I do have one issue where the cheese doesn't seem to melt in all the way. Do I need to turn down the heat and add time? Also, my kids love this! They asked me to make it tonight. Definitely a family favorite! Thanks for all the awesome recipes!

You could also try covering the skillet or pan to keep some of the heat in to melt the cheese on top.
